Here’s some context:
Most U.S. cheeses use fermentation-produced chymosin (FPC), a GMO enzyme that mimics cow-derived chymosin.
It was developed by Pfizer in the 1980s and became the first bioengineered food additive approved by the FDA in 1990.
Industry estimates suggest 80–90% of North American cheese contains FPC

FPC is classified by the FDA as a “processing aid,” meaning manufacturers don’t have to call it GMO on labels

Want non-GMO cheese? Look for:
USDA Organic — required to use animal or non-GMO rennet
Animal rennet specifically listed on the label
Craft or artisan cheese shops that disclose their rennet source.
